Bacon, Cheddar and Chive Mini-Muffins Recipe

Ingredients

  • 6 slices of bacon, diced, cooked in a sauté pan until browned, and drained on paper towels
  • 2 cups of grated sharp cheddar cheese
  • 3 cups all-purpose flour
  • 2 tablespoons snipped fresh chives
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 4 tablespoons unsalted butter, melted and set aside to cool for 10 minutes
  • 2 large eggs
  • 2 cups buttermilk
  • A dash or two of your favorite hot sauce (optional)
