Bacon Brunch Casserole

Ingredients

  • 2 - 16 oz. cartons 2% or 4% cottage cheese
  • 6 large beaten eggs
  • 1 stick melted butter or margarine
  • 8 oz. Velveeta, cut in 1" cubes
  • 6 slices or more bacon, cooked and chopped.
  • salt and pepper to taste

Directions

  1. Preheat oven to 375 degrees.
  2. Mix all ingredient together and pour into a baking dish (1 1/2 to 2 qt. Casserole will puff up as it bakes.
  3. Bake 30-40 minutes.
  4. Check with a toothpick for doneness.
