- Bacon and Onion Pie - Pots and Pins
- 2 (9-inch) pie crusts (you will use 1 1/2 of the pie crusts to fill a 9-inch deep dish pie tin)
- 2 large onions, thinly sliced
- 1 lb. bacon
- 6 eggs
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup Swiss cheese, shedded

%20where%20you%20could%20construe%20(rolling%20down%20his%20cheeks)%20on%20your%20own%20what%20I%20cannot%20say...last%20Friday%20night%20we%20watched%20the%20new%20Howie%20Mandell%20reality%20show%20with%20the%20mob-flash-dancers%20and%20the%20proposal%20(sniffles)%20and%20the%20wedding%20gown%20that%20could%20not%20be%20buttoned%20all%20the%20way%20up%20(pass%20the%20tissues)%20and%20when%20I%20looked%20at%20the%20mister,%20in%20the%20midst%20of%20all%20that%20staged%20romanticism,%20he%20was%20(crying)%20a%20bit%20touched%20(like%20a%20small%20child!!!)%20%20I%20wish%20I%20could%20tell%20you%20all%20about%20(hysterically%20funny!)%20it%20but%20I%20was%20sworn%20to%20secrecy%20and%20therefore%20cannot%20udder%20one%20word!%3C/p%3E%3Cp%3EThe%20mister%20might%20not%20have%20been%20SO%20emotional%20had%20he%20not%20been%20primed%20with%20this%20Bacon%20and%20Onion%20Pie%20for%20dinner...because%20it's%20good%20enough%20to%20humble%20a%20caveman...so%20maybe%20all%20of%20those%20emotions%20weren't%20really%20for%20the%20dancing%20groom%20and%20his%20shocked%20bride?%20%20Maybe%20it%20was%20a%20residual%20effect%20from%20this%20pie?!?%20%20Crispy%20bacon,%20carmelized%20onions,%20sour%20cream%20with%20a%20bit%20of%20cheese%20thrown%20in%20for%20good%20measure...it's%20firm,%20substantial,%20filling,%20and%20down-home%20delicious!%3C/p%3E%3Cp%3EMake%20this%20one%20my%20friends,%20it's%20dang%20good!%20%20Good%20enough%20to%20serve%20for%20brunch,%20lunch%20or%20dinner,%20with%20or%20without%20guests...and%20reheated%20in%20the%20microwave%20it's%20dang%20good%20the%20next%20day%20as%20well!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%20%20Unroll%20pie%20crusts.%20%20Place%20one%20crust%20in%20the%20bottom%20of%20a%209-inch%20deep%20dish%20pie%20tin%20and%20push%20around%20bottom%20and%20up%20the%20sides.%20One%20crust%20%20not%20enough%20to%20cover%20the%20pan,%20so%20supplement%20wth%20the%20other%20pie%20crust,%20cutting%20and%20%22glueing%22%20together%20by%20dipping%20your%20finger%20into%20water%20and%20pressing%20to%20seal.%20%20Form%20a%20nice%20ridge%20around%20top%20of%20pie%20tin%20by%20crimping%20dough.%20%20Put%20into%20refrigerator%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20cook%20bacon%20until%20crisp.%20%20Remove%20to%20paper%20toweling%20to%20drain,%20then%20crumble%20bacon%20and%20set%20aside.%20%20In%20the%20same%20skillet,%20cook%20onions%20in%20the%20bacon%20grease%20until%20browned,%20about%2010%20minutes.%20%20Remove%20onions%20to%20paper%20toweling%20to%20drain,%20if%20necessary,%20then%20allow%20to%20cool%20for%2010%20minutes.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20combine%20eggs,%20sour%20cream,%20salt%20and%20papper.%20%20Mix%20with%20a%20whisk%20until%20blended.%20%20Remove%20pie%20crust%20from%20refrigerator.%20%20Spread%20bacon%20bits%20around%20bottom%20of%20pie.%20%20Top%20with%20onions,%20spreading%20evenly.%20%20Pour%20egg%20mixture%20over%20onions.%20%20Sprinkle%20cheese%20on%20top.%20%20Bake%20for%2045%20to%2050%20minutes%20or%20until%20top%20is%20set%20and%20golden%20in%20color.%20%20Remove%20from%20oven%20and%20let%20sit%20for%2010%20minutes%20before%20cutting%20into%20wedges.%20%20Makes%208%20sevings.%3C/p%3E%3Cp%3E%22When%20I%20was%20a%20boy%20I%20was%20told%20anybody%20could%20become%20president,%20now%20I'm%20starting%20to%20believe%20it!%22%20%20%20%20%20%20%20%20%20%20%20%20%20%20%20~%20Clarence%20Darrow%3C/p%3E%3Cp%3EOne%20year%20ago:%20%20Quilt%20Group%20Friday%3C/p%3E%3Cp%3ETwo%20years%20ago:%20%20Easter%20Bunny%20Treats%20-%20Carrot%20Orange%20Drops%3C/p%3E%3Cp%3EThree%20years%20ago:%20%20Strawberry-Rhubarb%20Crumble%3C/p%3E){kind=link}
