Ingredients
- 2 lb bowfin fillets - (to 3) cut bite sized
- 1/2 c. peanut oil
- 2 c. minced onion
- 1 c. minced green pepper
- 8 x garlic cloves minced
- 1 can diced tomatoes and green chilies - (10 ounce)
- 1 can tomato sauce - (8 ounce)
- 2 c. water
- 1 can sliced mushrooms - (4 ounce)
- 1/2 c. minced green onion tops
- 1/4 c. minced parsley
- 1/4 tsp cayenne pepper
- 1 tsp salt
- 1 tsp freshly-grnd black pepper Warm cooked rice for serving
Directions
- Heat peanut oil in a heavy pot, and fry fish pcs 2 to 3 min.
- Remove fish from oil, and add in minced onion, green pepper and garlic. Saute/fry till tender, and drain oil.
- Add in diced tomatoes and green chilies, tomato sauce, water and fish, and bring to a boil. Lower heat and simmer 45 min.
- Add in remaining ingredients, and continue cooking over low heat for 15 min. Serve warm over cooked rice.
