Ground Beef Casserole

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 1 clove garlic minced
  • 1 - 8oz. can tomato juice or water
  • 2 tablespoon chilli powder
  • 1/4 teaspoon dried oregano
  • 1 - 15 1/2 oz. can kidney beans with juice or refried beans
  • 1 - 16 oz. bag fritos
  • 2 cups shredded cheddar cheese
  • 2 cups shredded lettuce
  • 1 large tomato, chopped
  • 1/2 chopped onion or green onion

Directions

  1. Preheat oven to 350 degrees
  2. Greas a 2 quart square baking dish. Set aside.
  3. In a large skillet over medium heat, brown the meat,onion, and garlic. Drain the excess fat. Stir the tomato sauce, tomato juice, chilli powder, and oregano into meat mixture.
  4. Layer the meat mixture, beans, and one-half of the corn chips in layers twice in the prepared baking dish, ending with corn chips.
  5. Cover and bake in the oven for 40 minutes.
  6. Serve with lettuce , tomato, onion, and cheese, and rest of chips.
