Ingredients

  • 1 1/2 lb Bacalao (Dry Cod Fish)
  • 1/2 c. Onions, diced
  • 1/2 c. Green peppers, diced
  • 1/2 c. Tomato diced
  • 1 Tbsp. Garlic, minced
  • 2 Tbsp. Parsley, minced
  • 2 Tbsp. Cilantro, minced
  • 2 Tbsp. Tomato paste
  • 1 c. White wine
  • 2 x Large eggs Extra virgin olive oil

Directions

  1. 1. Cook bacalao, changing water at least three times.
  2. 2. Shred the bacalao and throw away the dark pcs.
  3. 3. In a separate pan, saute/fry the onions, peppers, tomatoes and garlic in extra virgin olive oil. Then add in the tomato paste. Deglaze with the white wine.
  4. 4. Add in bacalao.
  5. 5. Cook together for about 15 min.
  6. 6. Add in raw beaten Large eggs in the middle of the stew. Sirring continuously.
  7. 7. Add in herbs. Season to taste.
  8. This recipe is from the Chef Alex Garcia of the Babalu restaurant in New York. (Babalu is a restaurant named for the club in the 1950 television show I LOVE LUCY.)
