Ingredients

  • 1 c. Diced cooked chicken breast
  • 2 Tbsp. Mayonnaise
  • 1 tsp Minced orange zest
  • 1 Tbsp. Minced shallots
  • 1 Tbsp. Minced fresh red pepper
  • 1 tsp Minced fresh chives Salt to taste Freshly grnd black pepper to taste
  • 1 x Ripe avocado halved, pit removed, and peeled
  • 4 x Radicchio leaves

Directions

  1. In a bowl combine; chicken, mayonnaise, orange zest, shallots, red pepper, and chives. Season to taste with salt and pepper. Divide the salad between the two avocado halves, filling the cavity.
  2. To serve, place 2 radicchio leaves on each serving plate and top with an avocado half.
  3. This recipe yields 2 servings.
