Ingredients

  • Salad:
  • 1 lrg head romaine lettuce cut or possibly torn in bite size pcs
  • 1 c. shredded swiss cheese
  • 1 c. cashews
  • 1/4 c. cran-raisins
  • 1 x apple peeled & cubed
  • 1 x pear peeled & cubed Dressing:
  • 2/3 c. oil
  • 1/2 c. sugar
  • 1/3 c. lemon juice
  • 2 tsp finely minced onion
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1 Tbsp. poppy seeds

Directions

  1. In a blender, combine sugar, lemon juice, onion, mustard & salt. Blend, add in oil, blend till thick and smooth, add in poppy seeds, blend a few min to mix.
  2. In a large salad bowl, combine all salad ingrdients, pour dressing over salad, toss.
  3. If preparing ahead, toss minced apples & pears with small amount of pineapple juice (sufficient to coat them) to keep them from turning brown.
  4. EdwardsFam Says: When reading, the combination of the ingredients don't sound appeasing, however, when combined, it tastes awesome. Guests love it.
