Aunt Ann's Fruit Punch Cookies

Ingredients

  • 2 large eggs
  • 1 1/2 c. sugar
  • 2 1/4 c. flour
  • 1 can (1 pound size) fruit cocktail with juice
  • 1 1/2 teaspoon soda
  • 1/2 teaspoon salt
  • 1 1/3 c. flaked coconut
  • 1/2 c. minced nuts
  • Glaze (see below)
  • 3/4 c. sugar
  • 1/2 c. butter
  • 1/4 c. canned lowfat milk
  • 1/2 teaspoon vanilla
  • 1/2 c. nuts

Directions

  1. Beat large eggs and sugar till lemon colored. Add in flour, fruit cocktail, soda and salt. Beat at medium speed with mixer till well blended. spread mix into a well-greased and lightly floured cookie sheet and cover with coconut and nuts. Bake at 350 degrees for 25 min. Drizzle bars with glaze.
  2. Mix all ingredients except nuts in a saucepan, bring to a boil and boil for 3 min. Remove from heat. Add in nuts. Cool slightly. Drizzle glaze over baked fruit punch bars.
