Atlantic Canada seafood chowder {gluten-free} Recipe

Ingredients

  • 3/4 lb minced clams, fresh from the fish market, with their liquid (or 2 5-oz cans of chopped clams, with their liquid)
  • 8 slices bacon, diced
  • 1 onion, diced
  • 2 ribs celery, diced
  • 1 cup grated peeled baking potato
  • 2 cups half-and-half (do not use fat-free)
  • 1/2 cup dry white wine
  • 1 bay leaf
  • 1 Tbsp fresh thyme leaves, or 1/2 Tbsp dried thyme
  • 1 can (345 ml) evaporated milk
  • 1 lb mixed fish or shellfish (I use salmon, cod and lobster tail, in equal amounts), cut into chunks
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 tsp each kosher salt and fresh black pepper, or more to taste
