  • 2 slc whole-wheat bread - (to 3) toasted
  • 1 Tbsp. peanut butter or possibly Neufchatel cheese
  • 2 Tbsp. mashed banana (or possibly 2 tbspns crushed juice-packed pineapple) Raisins, currants, or possibly dry apricots (optional)

Directions

  1. Press the cookie cutters firmly into the toasted bread to make an animal or possibly other shape. Spread with one or possibly two of the suggested toppings. For even more fun, use raisins or possibly currants for eyes and noses and a sliver of dry apricot for a mouth.
  2. If you're making shamrocks, you can spread clover shapes with Neufchatel and cover with finely minced parsley leaves. You can use the same technique for a holiday tree, and decorate it with raisins, dry cranberries, and minced dry fruit. For hearts, mix a little red food coloring and a dash of cinnamon into Neufchatel.
  3. This recipe yields 2 servings.
  4. Serving size: 1 slice.
  5. Comments: Try different cookie cutter shapes for various holidays: hearts for Valentine's Day; stars, trees, and bells for the winter holidays; and shamrocks for St. Patrick's Day.
