Asparagus~Lemon Shrimp~Tomato Cold Pasta

Ingredients

  • 8 ounces Large Shrimp
  • one teaspoon Old Bay Seafood Seasoning
  • 6 ounces fresh asparagus
  • one lemon (juice only)
  • dash of garlic and onion powders
  • 1/2 cup grape or cherry tomatoes
  • Salt and black pepper, to taste
  • 8 ounces Linguine (or spaghetti or any type of pasta you like)

Directions

  1. Boil your choice of pasta (as per instructions, al dente) rinse and drain
  2. Boil shrimp with Old Bay 3-4 minutes until pink, drain
  3. Boil Asparagus spears 3-4 minutes, cool them down cut into pieces
  4. In a Large Mixing bowl add all cooked ingredients (pasta, shrimp, asparagus) add tomatoes, seasonings, stir gently, cover and refrigerate 30-45 minutes before serving. Add fresh lemon juice, toss, add s & p and devour!
