Ingredients
- 1 med Onion -- finely minced
- 1 Tbsp. Extra virgin olive oil
- 5 c. Cooked brown rice
- 2 med Carrots -- julienned
- 1/4 c. Soy sauce
- 1/4 c. Sherry cooking wine
- 1 c. Frzn peas
Directions
- Saute/fry onion in extra virgin olive oil till starting to brown. Add in cooked rice and carrots and saute/fry till rice is a little crispy.
- Mix soy sauce and Sherry in small bowl. Sprinkle in a little garlic pwdr.
- Pour over rice. Mix well and saute/fry till rice begins to crisp.
- Fold in frzn peas and continue to saute/fry. When peas are heated through, make a well in center of rice and pour in beaten egg. Stir with a fork till cooked througn, then distribute the egg through the rice. Serve warm, garnished with sliced green onion tops.
