Ingredients

  • 1 med Onion -- finely minced
  • 1 Tbsp. Extra virgin olive oil
  • 5 c. Cooked brown rice
  • 2 med Carrots -- julienned
  • 1/4 c. Soy sauce
  • 1/4 c. Sherry cooking wine
  • 1 c. Frzn peas

Directions

  1. Saute/fry onion in extra virgin olive oil till starting to brown. Add in cooked rice and carrots and saute/fry till rice is a little crispy.
  2. Mix soy sauce and Sherry in small bowl. Sprinkle in a little garlic pwdr.
  3. Pour over rice. Mix well and saute/fry till rice begins to crisp.
  4. Fold in frzn peas and continue to saute/fry. When peas are heated through, make a well in center of rice and pour in beaten egg. Stir with a fork till cooked througn, then distribute the egg through the rice. Serve warm, garnished with sliced green onion tops.
