Ingredients

  • 1 c. finely diced fresh tomato
  • 1 bn green onions finely minced
  • 1/4 c. soy sauce
  • 3 Tbsp. seasoned rice vinegar
  • 1/4 c. finely minced cilantro
  • 2 tsp grnd fresh chili paste or possibly to taste
  • 1/2 c. finely minced Maui onion lemon or possibly lime juice
  • 1/4 c. grated daikon radish
  • 3/4 c. daikon
  • 3/4 c. carrot
  • 1 c. soba noodles cooked
  • 1/2 c. julienned won bok or possibly napa cabbage
  • 1/2 c. julienned zucchini

Directions

  1. SALSA: One hour before serving, combine all ingredients. Chill.
  2. PASTA SALAD: Shred daikon and carrot lengthwise into long strings to resemble the soba noodles. Toss with pasta, cabbage and zucchini in a salad bowl. Add in salsa and toss gently. Serve immediately.
