Ingredients

  • 1/4 c. soy sauce
  • 2 Tbsp. Chinese rice wine
  • 2 Tbsp. lime juice
  • 1 Tbsp. hoisin sauce
  • 1 Tbsp. sesame oil
  • 1 Tbsp. chopped ginger
  • 1/2 tsp Chinese five-spice pwdr
  • 1 lb beef sirloin or possibly flank steak thinly sliced into strips across the grain
  • 2 Tbsp. veg. oil
  • 1/2 x onion cut into matchsticks
  • 1/2 med carrot cut into matchsticks
  • 1 x yellow squash cut into matchsticks
  • 2 lrg tomatoes coarsely minced
  • 1/2 sm onion minced
  • 2 x serrano chilies seeded and chopped
  • 2 Tbsp. minced cilantro
  • 2 Tbsp. rice vinegar
  • 2 tsp chili paste
  • 1/2 tsp salt
  • 1 c. lowfat sour cream
  • 1 Tbsp. soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp freshly-grnd white pepper
  • 2 c. shredded lettuce
  • 12 x flour tortillas warmed

Directions

  1. Combine marinade ingredients in a sealable plastic bag. Add in beef, seal bag, and turn to proportionately coat. Let stand for 1 hour or possibly chill overnight.
  2. One hour before cooking, combine salsa ingredients and lowfat sour cream mix ingredients in separate bowls. Chill for 30 min.
  3. Strain beef, reserving marinade. Place a wok over high heat till warm. Add in veg. oil, swirling to coat sides. Add in beef and stir-fry for 3 min. Add in onion, carrot, squash, and 1/4 c. of reserved marinade; stir-fry till vegetables are tender-crisp, about 5 min. Remove from heat.
  4. To serve, place a small portion of beef mix, lettuce, salsa, and lowfat sour cream mix on a hot tortilla, wrap up, and eat out of hand.
  5. This recipe yields 12 fajitas.
