Ingredients

  • 1/4 c. lime juice
  • 3 Tbsp. fish sauce
  • 3 Tbsp. sugar
  • 2 tsp chopped ginger root
  • 2 tsp chopped garlic
  • 2 c. shredded cooked chicken
  • 1 sm nappa cabbage head thinly sliced
  • 1 sm green bell pepper thinly sliced
  • 1 sm red bell pepper thinly sliced
  • 2 x carrots grated
  • 1 c. diagonally sliced snow peas 3 pcs each
  • 1/2 c. minced fresh mint
  • 1/2 c. minced cilantro

Directions

  1. Whisk together the lime juice, fish sauce, sugar, ginger and garlic in a small bowl. Set it aside.
  2. Toss together the chicken, cabbage, green and red peppers, carrots, snow peas, mint and cilantro in a large bowl. Toss again with the dressing, making sure everything is proportionately coated.
  3. This recipe yields 4 servings.
