Arthur's Fried Fish Recipe

Ingredients

  • 3 lb hard white fish fillets
  • 2 Tbsp. lemon juice
  • 1 c. lowfat milk or possibly more as needed
  • 2 c. flour
  • 3 c. pancake mix
  • 2 c. club soda - (approximately)
  • 1 tsp basil
  • 1 tsp freshly-grnd black pepper
  • 1/2 tsp garlic salt Veg. oil for frying

Directions

  1. Cut fish fillets in half, making triangular shape. Cover with lowfat milk and lemon juice and chill 3 to 4 hrs.
  2. Drain off lowfat milk. Dip fillets in flour to coat each piece lightly. Let dry on a cookie sheet, making sure pcs don't touch.
  3. Add in oil to deep fryer or possibly heavy pan to a depth of at least 3 inches. Heat oil to 425 degrees.
  4. Combine pancake mix, basil, pepper, garlic salt and sufficient soda to make a thick batter, about the consistency of buttermilk. Dip floured fillets in batter and add in to the warm oil one at a time. Fry 4 to 5 min.
  5. Remove filets to cookie sheet, again, not letting them touch and keep hot in a 250 degree oven. (Don't heap fish as this creates steam in the oven and makes coating soft.) Deep fry remaining filets, keeping the depth of the oil at least 3 inches.
