Armagnac Poached Prunes With Vanilla Ice Cream Recipe

  • 1 1/2 c. Armagnac or possibly brandy
  • 1 c. sugar
  • 1/2 c. water
  • 1 x cinnamon stick broken in half
  • 1 piece fresh ginger - (1" long) thinly sliced
  • 1 x vanilla bean split lengthwise
  • 1 lb pitted prunes halved (abt 3 c.) Vanilla ice cream

Directions

  1. Combine Armagnac, sugar, 1/2 c. water, cinnamon and ginger in medium saucepan. Scrape in seeds from vanilla bean; add in bean. Stir mix over medium heat till sugar dissolves. Add in prunes and simmer till tender, about 10 min. Transfer prune mix to medium bowl. Cover and chill at least 3 hrs. (Can be prepared 4 days ahead. Cover and keep refrigerated.)
  2. Remove cinnamon, ginger and vanilla bean from prune mix. Divide prune mix among 6 bowls. Top with scoops of vanilla ice cream.
  3. This recipe yields 6 servings.
