Arizona Mexican Tamale Pie Recipe

  • 3/4 lb beef or possibly turkey
  • 1 c. minced onion
  • 1 1/2 c. diced green pepper
  • 4 x chopped clv garlic
  • 2 tsp Cumin
  • 1 can Black Beans
  • 1 can Chipotle Chiles (obtain from a Mexican foods store if not available elsewhere. Preferably get Chipotles canned in with the Adobo Sauce.)
  • 8 ounce can of stewed tomatoes
  • 2 tsp Adobo Sauce. (again, obtain from a Mexican foods store if not available elsewhere.)
  • 4 ounce Cheddar Cheese (grated)
  • 1/2 c. minced fresh Cilantro
  • 1 box cornbread mix -ex: Jiffy (make into cornbread batter, set aside)


  1. If you can't find Chipotle sauce substitute with Warm Salsa and Rotel's chilis & tomatoes in a can.
  2. Brown and saute/fry meat, onions, pepper and garlic on the stove in a large pot.
  3. Add in Cumin. Add in beans, tomatoes and chilis, and Adobo sauce. Saute/fry for 5 min. Remove from heat. Add in Cilantro. Pour into a glass baking (qt and a half approximately at least) pan. Pour the cornbread batter over the meat mix. Bake for 20-22 mi
