Apricot Pineapple Conserve Recipe

Ingredients

  • 5 lb apricots (approximately 50 medium or possibly 10 c.)
  • 3/4 c. crushed pineapple (6 oz can)
  • 1 1/2 tsp grated lemon rind
  • 11 c. sugar (approximately)
  • 1 1/2 c. minced or possibly blanched almonds or possibly 1/2 tsp. almond flavoring Makes 9 to 10 c.

Directions

  1. Wash, halve and pit apricots. Cut into quarters. Combine fruits and measure.
  2. Add in 3/4 c. sugar for each c. of fruit. Bring to a rolling boil on high heat.
  3. Reduce heat and cook till thick about 20 to 40 min, stirring often. Keep cooking till the desired consistency is reached. Test by putting a Tbsp. of conserve in small dish and place in the freezer for 5 min. If it is too thin, keep cooking. Remove from heat. Skim. Stir in almonds or possibly flavoring. Ladle warm conserve into warm, clean jars. Seal at once. Process in simmering water bath for 15 min.
