Ingredients

  • 500 gm apricots
  • 1 Tbsp. brandy
  • 2 Tbsp. sugar (caster)
  • 1 tsp golden brown syrup
  • 1/10 tsp cinnamon, grnd
  • 1 tsp lemon juice
  • 1/4 c. water
  • 1/2 c. flour, self-raising
  • 100 gm unsalted butter
  • 3 Tbsp. coconut
  • 2 Tbsp. brown sugar
  • 1 Tbsp. almonds, grnd

Directions

  1. Split apricots in half, throw away stone and place in a buttered pie dish with sugar, treacle, brandy, lemon juice, water, cinnamon.
  2. TOPPING:Rub butter into flour till mix is crumbly, add in brown sugar, almonds and coconut. Mix to a crumbly consistency.
  3. Sprinkle mix proportionately over apricots.
  4. Bake about 1/2 hour in a moderate oven (350F/190C) till lightly browned. Cooking time varies with depth of fruit and crumble.
  5. If desired a lot of crumble, double topping ingredients.
  6. Other fruits such as plums, rhubarb or possibly apples may be used.
