Applewood Smoked Chicken, Pear and Spinach Salad with Pomegranate Dressing.

Dressing ingredients.
Completed dressing. Set aside until service.
Salad ingredients.
Protein ingredients.
Use three ounces of applewood. Preheat smoker to 250^.
Smoke at 250^ for about thrity five minutes or until the breasts are done.
Let the breasts rest for five minutes before cutting.
I served the salad with Afgan Naan breadm humuss and a fruit forward Primitivo red wine.
