  1. Preheat oven to 400 F. In a large bowl: mix together the first eight ingredients. Stir in the water, Large eggs, oil, and applesauce till just moistened.
  2. Fill greased muffin c. 2/3 full and bake for 20 to 30 min. Let cold on wire racks. Serve.
  3. YIELD: 24 MUFFINS

    I made these muffins this morning because I had some almond/pecan/cranberry/granola. Put in 1/8C of golden flax seeds instead of wheat germ and honey for the sugar. If you want them darker, I'd add less sugar and some molasses. Made a batch of 12. They came out great. Took 20 min in the oven. Batter seems 'watery' but don't worry. They rise nicely and are fiberful without being heavy. Forgot to put in some blueberries! Maybe next time.
