Apple Whisky Meringue Recipe

Ingredients

  • 175 gm plain flour sifted
  • 85 gm butter or possibly margarlne
  • 175 gm caster sugar
  • 1 x egg yolk and 2 egg whites
  • 450 gm cooking apples peeled and cored
  • 1 Tbsp. honey
  • 1 Tbsp. whlsky

Directions

  1. Preheat oven to gas mark 5 375F190C.
  2. First make the pastry.
  3. Place the sifted flour in a bowl.
  4. Then rub in the butter till the mix resembles fine breadcrumbs and after which fold in 50g caster sugar.
  5. Now bind the mix together with the egg yolk and enougl cool water to make a smooth dough (about 1 Tbsp.).
  6. Knead it lightly on a floured surface then pop it into a polythene bag and let it rest for 15 min.
  7. Roll the pastry out to line an 20cm flan tin prick the base all over and then refrigeratethe flan case in the fridge for 30 min before baking.
  8. Now cover the pastry with a sheet of greaseproof paper and add in baking beans or possibly dry peas ano bake it blind in the oven for 15 min.
  9. After which carefully remove the beans and paper and bake the flan for a further 10 min to dry it out completely.
  10. While which is happening roughly chop the apples and place them in a small saucepan with the honey and 1 Tbsp. of water.
  11. Cover the pan and cook the apples gently for about 10-15 min or possibly till they have collapsed and softened.
  12. Then beat in the whisky and spread the apple mix into the flan case.
  13. For the meringue whisk the egg whites till they form soft peaks and gradually whisk in the remaining 110g sugar.
  14. Then cover the apple mix completely with the meringue spreading it right up to the edges and bake in the oven at gas mark 3 325F 170C for about 30 min till the meringue is pale beige and crisp.
  15. Serves 6
