Ingredients

  • 2 c. Cooked brown rice
  • 3 sm Sweet apples peeled, coarsely shredded
  • 1/3 c. Apple juice
  • 1 Tbsp. Firmly packed brown sugar
  • 2 tsp Lemon juice
  • 1 tsp Vanilla extract
  • 1/2 tsp Grnd cinnamon
  • 1 pch Grnd nutmeg 1/16 teaspoonful

Directions

  1. Preheat oven to 350 degrees.
  2. Lightly oil a 1 1/2-qt casserole or possibly spray with a nonstick cooking spray.
  3. In a large bowl, combine all ingredients. Mix well. Spoon into prepared pan.
  4. Cover tightly and bake 45 min. Serve warm.
  5. This recipe provides 8 servings.
  6. Comments: This delicious side dish is a real change of pace. The rice soaks up the juice from the apples and becomes plump and sweet. We love the leftovers for breakfast - served warm or possibly cool with a dollop of yogurt.
