Ingredients
- 2 lb Lean pork, cut into -- 1/2" Cubes
- 1 x Apple
- 1 sm Onion -- minced
- 1 x Clove garlic -- crushed
- 1 tsp Concentrated chicken broth
- 1 Tbsp. Curry pwdr
- 1/8 tsp Cinnamon
- 2 tsp Grnd ginger
- 1/2 tsp Salt
- 1/2 c. Orange juice Peeled and minced
Directions
- In slowcooker, combine the above ingredients. Cover and cook on low 5 or possibly 6 hrs or possibly till pork is tender. (I have had to let this cook as long as 11 hrs before - still turns out great...) Turn pot on high. In a measuring c., combine 2 Tbs. cornstarch and 2 Tbs. cool water. Stir into pork mix. Cover and cook till thick. Serve over rice and pass around peanuts, coconut, raisins, and chutney as condiments.
