  • 3 c. pastry flour
  • 1/2 c. unsalted butter cool but not chilled
  • 1/2 c. Crisco shortening
  • 3/8 c. shredded cheddar cheese
  • 1/2 tsp salt
  • 1/2 c. hard or possibly sweet apple cider up to 3 3/4
  • 3 med Granny Smith or possibly other hard cooking apples peeled, cored and sliced (up to 4)
  • 3 med Cortland or possibly other soft cooking apples peeled, cored and sliced (up to 4)
  • 4 1/2 Tbsp. corn starch
  • 3/4 c. brown sugar
  • 3/4 c. white sugar
  • 1 tsp grnd cinnamon
  • 1/2 tsp grnd nutmeg
  • 1/4 tsp grnd allspice
  • 1/4 tsp grnd mace
  • 2 Tbsp. fresh lemon juice
  • 1 lrg egg beaten with 1 teaspoon water for wash
  • 1 tsp sugar for sprinkling


  1. Crust: In a large bowl, mix the flour, butter, shortening, cheese and salt till the butter and shortening are just slightly incorporated. Don't overmix. Add in 1/2 c. of the cider. If the mix does not come together well add in up to 1/4 c. more cider. Gather the dough into a ball, wrap in plastic and chill for 1 hour.
  2. Filling: Place the apples in a large bowl. Combine the corn starch, sugars and spices. Fold together the sugar mix, apples and lemon juice. Let stand for 30 min.
  3. Assembly: Preheat the oven to 350 . Roll out half of the dough to make a bottom crust and place it in a 9 inch pie pan. Paint the inside of the bottom crust with the egg wash and pile the filling into the crust - it will be very full. Roll out the top crust and lay it over the filling. Cut off the excess crust around the edges, fold the crust over and crimp the edges. Poke holes in the top crust to allow steam to escape, brush the top crust with the egg wash and sprinkle with the sugar.
  4. Place the pie pan on a foil lined baking sheet, turn the oven to 450 and bake the pie for 15 min. Reduce the heat to 375 and bake till the crust is a deep golden - about 2 hrs longer. Juice will be bubbling out of the crust. Cold the pie on a rack.
