Ingredients

  • Filling:
  • 1 1/2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 6 Apples
  • 1/4 cup Truvia
  • 1/4 cup cornstarch
  • Crust:
  • 1 1/3 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/3 cup unsweetened applesauce
  • 3 tablespoons skim milk

Directions

  1. For Crust:
  2. Combine flour and salt in bowl. Blend applesauce and milk in bowl. Add to flour mixture. Stir with fork until forms large clumps. Press into ball. Flatten to form 5-6 inch "pancake". Roll between sheets of wax paper. Peel off top sheet. Flip into 9 inch pie pan. Remove other sheet. Press dough into pie plate. Trim and flute.
  3. For Filling:
  4. Preheat oven to 350°F. Coat a 9-inch deep-dish pie pan with nonstick spray.
  5. Combine lemon juice and vanilla in a large bowl. Peel, core and cut apples into 3/4-inch chunks, tossing them in the lemon juice mixture as you work.
  6. Mix truvia and cornstarch and toss with apples.
  7. With a rubber spatula, scrape the apple filling into pie shell.
  8. Place the pie on a baking sheet with sides.
  9. Bake until crust is golden and filling bubbles, 45 to 55 minutes. Cool on a wire rack for about 1 hour. Serve warm or at room temperature.
