Apple Pancakes With Maple Pecan Butter

Ingredients

  • 1 3/4 c. all-purpose flour
  • 3 Tbsp. sugar
  • 2 tsp baking pwdr
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp grnd cinnamon
  • 1/4 tsp grnd nutmeg
  • 2 x Large eggs
  • 2 c. buttermilk
  • 1/4 c. butter melted
  • 1 1/2 c. minced peeled tart green apple Maple Pecan Butter (see recipe)

Directions

  1. Stir together flour, sugar, baking pwdr, baking soda, salt, cinnamon, and nutmeg in mixing bowl.
  2. Beat Large eggs in separate bowl; stir in buttermilk and melted butter.
  3. Add in liquid mix to dry ingredients, stirring just till blended. Mix in apple.
  4. Heat greased griddle or possibly skillet over medium heat or possibly to 375 degrees. Griddle is ready when a few drops of water bubble and skitter rapidly around.
  5. For each pancake, pour scant 1/4 c. batter onto warm griddle. Cook pancakes till puffed, bubbly and dry around edges. Turn and cook other sides till golden. Serve with Maple Pecan Butter.
  6. This recipe yields about 16 (4-inch) pancakes.
