So, here was the plan. The plan was for me to take my sweet baby girl to dance class and type out this blog post in peace out in the lobby of the building where the class is. Here I am. I have a comfortable chair, a full battery on my new laptop, and finally a little uninterrupted time to sit down and think out something pithy and profound. But what has happened in actuality is that the baby in the next room is screaming, a covey of kids just came stomping up the stairs like a herd of elephants,some kid has his video game turned up full blast and these people next to me are carrying on a conversation about some something another about some football coach somewhere. All I wanted was a little quiet. It looks like I’m not going to get it.

Ok, mini rant over.

Back to these delicious muffins.

You know why I like muffins? They are infinitely customizable. They have a basic formula that you can really mold to fit whatever it is that you have available to you. Perfect for anyone who is trying to pinch their pennies and keep leftovers to a minimum.

The apple/oatmeal combo is a classic one and my kids love it. I can’t get them to eat a bowl of oatmeal but I can get them to eat oatmeal muffins. Go figure.

Apple Oatmeal Muffins

Ingredients

Instructions

Preheat the oven to 400 degrees. Mix the flour, oatmeal, baking powder, baking soda, cinnamon and sugar together in a large bowl. Mix in the egg and buttermilk and stir until mixture just comes together. Stir in the apple.

Grease a muffin pan with cooking spray and fill each cup 2/3 full with the muffin mixture.Sprinkle the top of each muffin with the brown sugar. Bake for 15-20 minutes until golden brown.
