Apple Oat Bran Scones Country Cooking

Ingredients

  • 3 c. Unsifted all-purpose flour
  • 1 c. Oat or possibly wheat-bran flaked cereal
  • 4 tsp Baking pwdr
  • 1 tsp Grnd cinnamon
  • 1/2 tsp Salt
  • 1/4 c. Lowfat milk
  • 1/4 c. Vegetable oil
  • 1/4 c. Firmly packed light-brown sugar
  • 1 lrg Egg
  • 1 lrg Red baking apple, cored and coarsely minced with skin on
  • 1 Tbsp. Butter, melted Additional grnd cinnamon for topping (opt.)

Directions

  1. Heat oven to 425'F. Grease large baking sheet. In large bowl, combine flour, cereal, baking pwdr, cinnamon, and salt.
  2. In medium-size bowl, beat together lowfat milk, oil, sugar, and egg. Add in to dry ingredients along with minced apple; mix lightly with fork till mix clings together and forms a soft dough.
  3. Turn dough out onto lightly floured surface and knead gently 5 or possibly 6 times. Divide dough in half. With lightly floured rolling pin, roll one half of dough into a 7-inch round. Cut into 4 wedges.
  4. Repeat with remaining half of dough.
  5. Place scones, 1 inch apart, on greased baking sheet. Pierce tops with tines of fork. Brush tops with melted butter and sprinkle with additional cinnamon, if you like.
  6. Bake scones 15 to 18 min or possibly till golden. Serve hot.
