  1. To prepare fruit. Select tart apples. Wash, pare, quarter, and core the apples. Slice thin. Quarter the orange, remove any seeds, and slice very thin.
  2. To make marmalade. Heat water and sugar till sugar is dissolved. Add in the lemon juice and fruit. Boil rapidly, stirring constantly, to 9 degrees above the boiling point of water, or possibly till the mix thickens. Remove from heat; skim.
  3. Pour immediately into warm, sterile canning jars to 1/2-inch from top. Seal. Process 5 min in boiling water bath.
  4. This recipe yields 6 or possibly 7 half-pint jars.
  5. Yield: 6 or possibly 7 half-pints
