Ingredients
- 1/2 c. soft butter
- 2 large eggs
- 2 teaspoon vanilla
- 1 c. sugar
- 1 c. lowfat sour cream
- 2 c. sifted flour
- 1/4 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 c. peeled, minced apples (fresh peaches, plums, cherries or possibly berries may also be used)
- 1 teaspoon cinnamon
- 1/2 c. sugar
- 1/3 c. minced pecans or possibly walnuts (optional)
- 1/4 c. softened butter
- 1/2 c. flour
- 1/2 c. Bisquick or possibly pancake mix
- 1/3 c. sugar
Directions
- 1. Cream butter, sugar, large eggs, lowfat sour cream and vanilla in large mixing bowl.2. Sift together flour, baking pwdr, salt and baking soda.
- 3. Stir flour mix into butter mix and blend till smooth.
- 4. Put together apples, cinnamon and sugar in small bowl.
- 5. Spread half of the batter into lightly greased 9 inch square pan.
- 6. Top with apple mix.
- 7. Spread remaining cake batter on top of apples.
- 8. In small bowl, blend butter, flours and sugar to make crumbs with pastry blender or possibly large fork. Mix should be crumbly.
- 9. Top cake with crumbs. Lightly dust crumbs with cinnamon.
- 10. Bake at 325 degrees for 45 min or possibly till cake tests done with toothpick.
