Ingredients
- 2 1/2 c. flour
- 1 1/3 c. plus 2 T sugar
- 1 teaspoon salt
- 1/3 c. butter
- 3 T oil
- 2 large eggs
- 6 c. peeled and minced apples
- 1 T lemon juice
- 40 caramels
- 1 c. evaporated lowfat milk
- 1 (8 ounce) pkg. cream cheese
- 1/2 c. minced pecans
Directions
- Put together 2 cups flour, 2 tbsp sugar and salt in a bowl. Cut in butter till crumbly. Add in oil, 1 egg, and 2 2/3 tbsp cold water. Mix well. Press into 10 x 15 inch pan.Put together apple, 1 cup sugar, 1/2 cup flour, and lemon juice. Spread over crust. Heat caramels in evaporated lowfat milk over low heat, stirring constantly. Pour over apple layer. Put together cream cheese, 1 egg, and 1/3 cup sugar. Beat till smooth. Spread over caramel layer. Top with pecans. Bake at 325 degrees for 55 min. Cool slightly. Cut into bars.
