Apple Corn Bread (Vegan)

Ingredients

  • 1 c. Cornmeal
  • 1 c. Flour
  • 1 c. Diced Apple
  • 1/2 c. Brown Sugar
  • 4 tsp Baking Pwdr
  • 1 1/4 c. Lowfat milk Alternative -- * see Note Mixed with 1 teaspoon Apple Cider Vinegar
  • 2 Tbsp. Oil
  • 1/2 c. Orange Marmalade -- (or possibly Other jam)

Directions

  1. I.e. Plain Rice Lowfat milk, Lite Soy Lowfat milk, Almond Lowfat milk, etc.
  2. Mix all ingredients in order listed. Put one half of the batter in a greased 8 or possibly 9 inch square baking pan. Proportionately top batter with 1/2 c. jam and top with remaining batter.
  3. Bake at 400 F for 25 min. Don't overbake. Allow to cold slightly before cutting
