Ingredients

  • 4 Tbsp. Unsalted butter
  • 1 lrg Thinly sliced red onion
  • 1 tsp Minced fresh thyme leaves
  • 1 x Granny smith apple, peeled, Cored, sliced
  • 3/4 c. Apple cider
  • 2 whl chicken breasts
  • 1/4 c. Flour
  • 1/4 c. 1/2 & 1/2
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 Tbsp. Chopped parsley

Directions

  1. In 12" nonstick skillet, heat 3 Tbls. butter. Add in onion & thyme; over medium-low heat, saute/fry 12-15 min, till onion is soft & begins to brown. Stir in apple & cider; over med heat, saute/fry 8 min, till apple is soft. Remove from skillet; keep hot. On waxed paper, coat chicken with flour. In skillet, heat remaining 1 Tbls. butter; over med heat, cook chicken 4 to 5 min each side. Remove to platter; keep hot. To pan, add in apple mix, half & half, salt & pepper; when warm, spoon over chicken. Sprinkle with parsley.
