Apple-Bacon Spinach Salad Recipe

Truly a favorite salad here! Love the apples and cut bacon-Yum.

Ingredients

  • 8 ounces fresh baby spinach (rinsed and dried)
  • 1/4 cup pure apple juice
  • a few dashes of balsamic vinegar
  • one apple (I use Red Delicious) any will work, sliced
  • 2 slices cooked Applewood bacon cut into pieces
  • dash of white pepper

Directions

  1. Cook bacon, cut into pieces (save the grease)
  2. Add spinach in a bowl, add bacon and apple slices, toss gently.
  3. In a saucepan add bacon fat, apple juice, balsamic vinegar, pepper and cook until reduced a bit. Cool then drizzle over salad
  4. Enjoy!
