Ingredients

  • Grated zest and juice of 1 lime
  • 1 tablespoon white wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon chopped fresh mint leaves
  • 1 tart apple (such as Granny Smith or Pippin) -- peeled, cored and sliced 1/4 inch thick
  • 1 avocado -- peeled, pitted and sliced 1/2 inch thick
  • 1 seedless cucumber -- peeled, halved and sliced 1/4 inch thick
  • 4 cups watercress -- washed and trimmed of tough stems
  • Sea salt and freshly ground black pepper to taste
  • 3 ounces feta -- thinly sliced
