Angel Hair With Scallops

Ingredients

  • 1 Tbsp. Extra virgin olive oil
  • 3 cl Garlic
  • 2 x Shallots
  • 1 tsp Dry thyme
  • 1/4 c. Fresh parsley
  • 8 x Mushrooms
  • 1 can Plum tomatoes
  • 1 c. White wine
  • 1 lb Scallops
  • 1/2 lb Angel hair pasta Salt and black pepper Grated parmesan cheese

Directions

  1. Heat oil in saute/fry pan over medium heat. Saute/fry garlic and shallots till soft. Stir in thyme & parsley. Add in mushrooms. Cook a few min. Stir to mix well. Add in tomatoes. Mix well. Add in wine slowly. Increase heat to high.
  2. Boil and reduce liquid. Reduce heat and add in scallops. Simmer 2-3 min.
  3. Don't overcook. Cook pasta in pot of boiling water for about 4 min.
  4. Drain. Place in large bowl. Pour scallops and sauce over pasta. Season with salt and black pepper. Toss together and serve. Approximately 8-10 min.
