Ingredients

  • 2 tsp extra virgin olive oil
  • 1 x garlic clove chopped
  • 1 sm tomato seeded, diced
  • 1 tsp chopped fresh oregano
  • 1/2 c. crumbled feta cheese
  • 2 tsp capers
  • 1/2 tsp lemon zest
  • 4 c. cooked angel-hair pasta

Directions

  1. In a skillet over medium heat, heat the oil. Add in the garlic and tomato and saute/fry for 2 min. Add in the oregano and saute/fry for 1 minute. Add in the feta, capers, and lemon zest. Remove from heat.
  2. Toss feta mix with the angel hair and serve.
  3. This recipe yields 4 servings.
  4. Serving size: 1 c. pasta.
  5. Comments: One of our simplest pasta preparations with a big, bold taste. If you can, buy feta cheese from a specialty cheese shop rather than your supermarket. Not only will you have many more varieties to choose from, but the feta will be less salty. Good feta has a mild salty flavor which does not overpower.
