Angel Hair Pasta With Shrimp And Lemon

Ingredients

  • 1/2 lb dry angel hair pasta, cooked according to package directions
  • 3 Tbsp. extra virgin olive oil
  • 3 x clove garlic, peeled and minced
  • 2 x (14.5-ounce.) ounces diced tomatoes, liquid removed
  • 1 x lemon, juiced
  • 1 Tbsp. minced fresh oregano
  • 1/8 tsp salt
  • 1/8 tsp grnd black pepper
  • 1 lb shrimp, peeled and deveined
  • 1 x lemon, sliced in 1/4 inch slices

Directions

  1. Cook pasta according to package instructions; drain and set aside.
  2. In a large nonstick skillet heat oil; add in garlic and saute/fry till golden brown, about 1 minute. Add in tomatoes, oregano, lemon juice, salt and pepper. Lower heat and simmer for 5 min. Add in shrimp and cook till just pink. Add in pasta and toss till thoroughly heated.
  3. Serve immediately.
