Ingredients

  • 1-2 # shelled raw shrimp
  • 8 Campari tomatoes
  • 5 Tblspn Fresh basil
  • 6 cloves or garlis
  • 1 1/4 cup extra virgin olive oil
  • 2 Tblspn lemon juice
  • 2 Tblspn fresh Cilantro
  • 2 Tblspn white or blush wine
  • 1 Tblspn fresh oregano
  • 1 tspn salt
  • 1 tspn pepper
  • Angel hair pasta

Directions

  1. Combine the basil, cilantro, garlic, olive oil and lemon juice in a bowl, whisk together until well blended. Add the raw shrimp and let marinade for 30 minutes.
  2. Dice up the Campari tomatoes, add basic, garlic, olive oil and wine, cook over low-medium heat for 5-7 minutes.
  3. Boil water and cook pasta according to package.
  4. Get a saute pan good and hot, but not smoking, just hot enough that a drop of cold water will sizzle and evaporate quickly.
  5. Saute the shrimp in a pan with the mix it was resting in. After a few minutes add the tomato mix to the pan and continue cooking over low heat for another 7 minutes.
  6. Drain the pasta and place onto plates, then gently spoon the sauce and shrimp over it.
