Ingredients

  • 2 c. cooked elbow macaroni
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound Velveeta cheese in sm. cubes
  • 2 T butter
  • 2 T flour
  • 2 c. lowfat milk
  • butter for topping top of casserole

Directions

  1. In microwave-safe bowl, put together 2 tbsp butter and 2 tbsp flour. Microwave on high for 1 minute. Stir to make a paste out of flour and butter. Add in lowfat milk, stirring to mix. Microwave on high for 2 min. Stir and repeat till the sauce has thickened slightly and has a smooth consistency.In an ungreased 2 qt casserole, layer 1/2 of the macaroni, 1/2 of the cheese, 1/2 of the seasonings. Repeat. Pour white sauce over these ingredients. Dot with butter. Cover and bake at 375 degrees for 30 min. Uncover and bake for 15 more min. 6-8 servings.
