Amish Bread Pudding

Ingredients

  • 2 c. Lowfat milk, scalded
  • 1/4 c. Butter or possibly margarine
  • 2 x Large eggs
  • 1/2 c. Sugar
  • 1/4 tsp Salt
  • 1 tsp Grnd nutmeg
  • 3 c. Soft breadcrumbs
  • 1/2 c. Raisins

Directions

  1. Combine lowfat milk and butter, stir till butter is melted. Cold to lukewarm.
  2. Combine Large eggs, sugar, salt, and nutmeg, beat at medium speed of electric mixer for 1 min. Slowly stir in lowfat milk mix. Place breadcrumbs in a lightly greased 1-1/2-qt casserole; sprinkle with raisins. Add in lowfat milk mix. Bake at 350 for 50 min or possibly till set. Serve hot.
  3. Makes 6 to 8 servings.
  4. This recipe does not use Vanilla, but I add in 1 tsp. of vanilla.
