Amish Beef Pot Roast

I grew up not far from an Amish settlement in western Pennsylvania. I was friends with one of the daughters of an Amish family and her Mom was an incredible cook. She shared some of her recipes with me--and I have tried to adapt them to today's conveniences (like non-stick foil!).

Goes Well With: mashed potatoes, buttery mashed potatoes, fresh green beans

Ingredients

  • 1 3-4 pound chuck roast (remove all visible fat)
  • Salt & pepper
  • 1/2 t dried thyme
  • 2 crumbled bay leaves
  • 1 large onion, sliced

Directions

  1. Preheat oven to 275 degrees. Line a 13x9 dish or pan with non-stick aluminum foil (to make clean-up much easier). Sprinkle the meat with salt, pepper, thyme and bay leaves. Place the sliced onions over top of the roast. Cover the dish or pan tightly with foil. Bake (with no peeking!) for six hours. Take it out of the oven and let it sit, still covered, for 10 more minutes. Slice it up (or shred it and add your favorite BBQ sauce and serve it for sandwiches. You could do this in a crockpot, as well (although I have not tried this).
