Ingredients

  • 1 (15 ounce) pkg. Pillsbury all ready pie crust
  • 1 (8 ounce) pkg. Philadelphia Brand cream cheese, softened
  • 1/4 c. sugar
  • 2 teaspoon lemon juice
  • 1/2 c. whipping cream
  • Assorted fresh fruit
  • 1/4 c. Kraft apricot preserves
  • 1 T water

Directions

  1. On floured surface, roll pastry to 12 inch circle. Place in 10 inch tart pan or possibly quiche dish. Prick bottom and sides of pastry with fork. Bake at 400 degrees for 9 to 11 min or possibly till golden. Cool. Put together cream cheese, sugar, and juice, mixing at medium speed of electric mixer till well blended. Add in whipping cream; mix at high speed till light and fluffy. Spread into pie shell; refrigerate several hrs. Arrange fruit on tart; brush with combined preserves and water.8 to 10 servings. Preparation time: 25 min plus cooling and chilling. Baking time: 11 min.
  2. Variation: Substitute 9 inch pie plate for tart pan.
