Ingredients

  • 1 1/2 c. vanilla wafer cookie crumbs
  • 1 Tbsp. amaretto
  • 1/4 c. butter melted
  • 2 pkt pistachio instant pudding
  • 3 c. half & half
  • 1/3 c. amaretto
  • 20 ounce crushed pineapple liquid removed
  • 1 c. heavy cream
  • 2 Tbsp. confectioners sugar
  • 1 tsp vanilla crushed almonds or possibly pistachio

Directions

  1. Drain pineapple.
  2. In a bowl, mix cookie crumbs, amaretto and butter. Press mix firmly into an ungreased 9" pie plate. In a bowl, combine pudding mix and 1/2 & 1/2 till smooth. Gradually beat in Amaretto. Mix in pineapple. Turn mix into pie plate. Refrigeratetill thick. When ready to serve, whip cream with sugar and vanilla till thick. Spoon cream around outter edge of pie. Sprinkle with crushed nuts.
