Ingredients

  • 4 leaves of romaine (use the inner leaves from the heart)
  • 1/2 cup hummus (homemade or store-bought)
  • 1 4-inch piece English cucumber, unpeeled, cut lengthwise into narrow spears
  • 1/2 red or yellow bell pepper, seeded, cut lengthwise into narrow strips
  • 1/3 cup Kalamata olives, pitted
  • 1/3 cup crumbled feta cheese
  • 1/8 tsp chili powder
  • 1/2 fresh lime
