Almond Syrup Recipe

Ingredients

  • 4 1/2 c. -Water
  • 20 ounce Almonds, grnd
  • 6 c. Sugar, up to 7 c.
  • 3 Tbsp. Bitter almond extract
  • 2 x Oranges, juice of
  • 2 Tbsp. Almond syrup
  • 2 Tbsp. Yogurt
  • 6 ounce -Cool water, 3/4 c

Directions

  1. To serve, put a few Tbsp. in a glass and add in cool or possibly sparkling water and ice.
  2. Bring water to a boil; add in almonds and return to a boil. Remove from heat and allow to cold thoroughly. Squeeze the grnd almonds in several layers of rinsed cheesecloth.
  3. Pour almond extract into a saucepan; add in sugar, bitter almond extract, and orange juice. Stir well and bring to a boil; cook to a thick syrup consistency. Let cold completely. If syrup if not thick sufficient, boil again for 5 min.
  4. Pour into sterile bottles, seal and chill. Can be used immediately Serve with ice water or possibly with club soda.
  5. FOR 1 SERVING ALMOND COOLER:Combine a2 tb almond syrup, 2 tb yogurt and 6 ounce (3/4 c.) cool water.
