%3C/p%3E%3Cp%3EApril%2018,%202016%20By%20Isabelle%20Boucher%201%20Comment%20%7C%20Filed%20Under:%205%20ingredients%20or%20less,%20bars%20and%20cookies%3C/p%3E%3Cp%3EI%20might%20be%20jinxing%20myself%20right%20now,%20but%20it%20looks%20like%20spring%20is%20finally%20here%E2%80%A6%20though%20for%20a%20while%20there%20I%20was%20starting%20to%20wonder%20if%20we%20were%20in%20for%20a%20years-long%20Westeros%20style%20winter.%3C/p%3E%3Cp%3EAnyone%20who%E2%80%99s%20spent%20a%20couple%20of%20years%20in%20Toronto%20will%20tell%20you%20that%20our%20springs%20are%20notoriously%20fickle,%20but%20this%20might%20be%20the%20first%20April%20in%20my%2030-odd%20years%20here%20that%20within%20a%20two-week%20span%20we%20went%20from%20this%E2%80%A6%3C/p%3E%3Cp%3E%E2%80%A6to%20this%E2%80%A6%3C/p%3E%3Cp%3EThankfully,%20if%20the%20forecast%20is%20to%20be%20believed,%20balmy%20spring%20weather%20is%20finally%20here%20to%20stay.%3C/p%3E%3Cp%3EI%E2%80%99m%20hoping%20that%20the%20change%20in%20the%20air%20extends%20to%20more%20than%20just%20the%20weather,%20because%20I%E2%80%99m%20having%20more%20trouble%20than%20usual%20in%20shaking%20off%20my%20winter%20blues%20this%20year.%3C/p%3E%3Cp%3EMaybe%20it%E2%80%99s%20this%20lingering%20pain%20in%20my%20back,%20or%20maybe%20it%E2%80%99s%20the%20usual%20lack%20of%20interesting%20produce%20at%20the%20markets%E2%80%A6%20but%20whatever%20it%20is,%20I%E2%80%99ve%20been%20struggling%20to%20find%20my%20rhythm%20in%20the%20kitchen.%3C/p%3E%3Cp%3EI%20normally%20have%20no%20problem%20brushing%20off%20my%20failures,%20but%20even%20my%20normally%20foolproof%20recipes%20aren%E2%80%99t%20cooperating%20with%20me.%20It%E2%80%99s%20hard%20not%20to%20take%20it%20to%20heart%20when%20I%20can%E2%80%99t%20even%20get%20a%20simple%20fruit%20cobbler%20to%20cooperate.%3C/p%3E%3Cp%3EIt%E2%80%99s%20not%20all%20bad,%20though.%20I%E2%80%99ve%20had%20a%20couple%20of%20successes,%20including%20these%20lovely%20little%20almond%20cookies.%20They%E2%80%99re%20soft%20and%20chewy%20and%20taste%20just%20like%20marzipan,%20and%20just%20the%20thing%20to%20use%20the%20egg%20whites%20that%20always%20seem%20to%20be%20kicking%20around%20in%20my%20fridge.%20(A%20common%20problem%20for%20afficionados%20of%20homemade%20ice%20cream.)%3C/p%3E%3Cp%3EPlus,%20as%20a%20handy%20bonus,%20no%20flour%20means%20these%20cookies%20are%20gluten-free%20(and,%20incidentally,%20also%20kosher%20for%20passover%20if%20you%20sub%20the%20corn%20starch%20for%20tapioca%20flour%20or%20potato%20starch).%3C/p%3E%3Cp%3EPaired%20with%20a%20shot%20of%20strong%20espresso,%20they%20got%20a%20long%20way%20to%20making%20me%20feel%20just%20a%20bit%20better%20about%20my%20current%20lack%20of%20culinary%20mojo.%3C/p%3E%3Cp%3EAnd%20that%20pesky%20cobbler?%20It%E2%80%99s%20on%20my%20list%20of%20things%20to%20tackle%20again.%20If%20spring%20can%20manage%20to%20rise%20above%20this%20miserable%20weather,%20then%20surely%20I%20can%20get%20this%20dessert%20to%20cooperate.%3C/p%3E%3Cp%3ESoft%20Amaretto%20Cookies%20(Amaretti%20Morbidi)%20%20%20%20%20%20%20These%20traditional%20Italian%20cookies%20are%20soft%20and%20chewy%20and%20taste%20just%20like%20marzipan.%20I%20prefer%20to%20use%20unblanched%20almost%20flour%20for%20a%20more%20rustic%20brown-speckled%20cookie,%20but%20feel%20free%20to%20use%20blanched%20almond%20flour%20if%20that's%20what%20you've%20got%20on%20hand..%20%20Recipe%20type:%20Dessert%20Cuisine:%20Italian%20Serves:%2030%20%20%20Ingredients%3C/p%3E%3Cp%3E2%20cups%20unblanched%20almond%20flour%201%20cup%20sugar%202%20tbsp%20corn%20starch%202%20large%20egg%20whites%20%C2%BC%20tsp%20salt%20%C2%BD%20tsp%20almond%20extract%20%C2%BD%20cup%20icing%20sugar%20%20%20Instructions%3C/p%3E%3Cp%3EPreheat%20oven%20to%20300F.%20Line%20two%20large%20baking%20sheets%20with%20parchment%20paper%20or%20silicone%20liners.%20In%20a%20large%20bowl,%20sift%20together%20the%20almond%20flour,%20sugar,%20and%20corn%20starch.%20In%20a%20second%20bowl,%20whisk%20the%20egg%20whites%20and%20salt%20until%20foamy%20and%20just%20shy%20of%20forming%20soft%20peaks.%20Whisk%20in%20the%20almond%20extract.%20Add%20the%20dry%20ingredients%20and%20stir%20until%20everything%20comes%20together%20into%20a%20soft,%20sticky%20dough,%20kneading%20with%20your%20hands%20if%20necessary.%20Lightly%20dust%20your%20hands%20with%20icing%20sugar.%20Using%20a%20tablespoon%20measure,%20scoop%20out%20the%20dough%20and%20roll%20into%201-inch%20balls,%20dusting%20your%20hands%20with%20icing%20sugar%20as%20needed%20to%20keep%20the%20dough%20from%20sticking.%20Arrange%20the%20dough%20balls%20on%20prepared%20baking%20sheets,%20leaving%20an%20inch%20of%20space%20between%20the%20cookies.%20Let%20the%20cookies%20rest%20for%2015%20minutes%20while%20the%20oven%20finishes%20preheating,%20then%20bake%20for%2020-22%20minutes%20or%20until%20the%20tops%20are%20crackled%20and%20dry.%20Let%20cool%20for%205%20minutes%20on%20the%20baking%20sheet,%20then%20transfer%20to%20a%20wire%20rack%20to%20cool%20off%20completely.%20Store%20the%20cooled%2
